Chicken "Fried" Rice

3 oz of chicken
1 c broccoli flowerets
1/4 c Carrots
2 t butter
3/4 c cooked brown rice
1/2 egg beaten
2T low sodium soy sauce



Cook chicken and steam broccoli and carrots. Heat a large skillet and add butter.  Add cooked chicken, veggies, brown rice, beaten egg, and soy sauce. Cook for 2 minutes until egg is cooked or warmed through.

Yields- 1 serving
